Like many other individuals with ADHD, Deputy Sub-Editor Maya Glantz admits she is highly susceptible to falling into the trap of a hyper-fixation meal. Throughout the summer of 2023, this salad had her in a chokehold. She ate a variation of it at least once a day, and with good reason. The crunchy chickpeas and creamy avocado make for an endlessly satisfying bite.
Maya’s Perfect Chicken Salad
Larder sub-editor Maya Glantz shares the recipe for her all-time favourite salad
Ingredients
- 400g tin chickpeas
- 30 ml veggie oil
- 2 heads gem lettuce
- 1/2 1 white cabbage, finely shredded
- 1/2 1 cucumber
- 75 g shelled edamame
- 1 ripe avocado
- 2 chicken breasts cooked
- 100 g tahini
- 2 tbsp soya sauce
- 1 tbsp sesame oil
- 1 tsp honey
- 2 tbsp rice vinegar
Instructions
- Rinse chickpeas, pat dry, and fry with veggie oil in a hot pan for 3 minutes
- Season with salt and pepper to taste
- Boil edamame
- Finely shred cabbage
- Chop lettuce, cucumber, and chicken into bite-sized pieces
- Mix together all dressing ingredients
- Toss cabbage and chopped ingredients with dressing
- Top salad with chickpeas
