Maya's Perfect Chicken Salad

- 400g tin chickpeas
- 30 ml veggie oil
- 2 heads gem lettuce
- 1/2 1 white cabbage, finely shredded
- 1/2 1 cucumber
- 75 g shelled edamame
- 1 ripe avocado
- 2 chicken breasts cooked
- 100 g tahini
- 2 tbsp soya sauce
- 1 tbsp sesame oil
- 1 tsp honey
- 2 tbsp rice vinegar
Rinse chickpeas, pat dry, and fry with veggie oil in a hot pan for 3 minutes
Season with salt and pepper to taste
Boil edamame
Finely shred cabbage
Chop lettuce, cucumber, and chicken into bite-sized pieces
Mix together all dressing ingredients
Toss cabbage and chopped ingredients with dressing
Top salad with chickpeas
