From the ‘family cakes and tray bakes’ section of Multimedia Deputy Editor Mariam Aziz’s favourite cookbook comes an easy, two-bowl bake with lots of chopped nuts, dried fruits, and orange juice. It’s spring in a loaf.
Mariam’s Banana and Cranberry Loaf Cake
A delicious family-sized fruit loaf
Ingredients
- 225 g self-raising flour
- 1/2 tsp baking powder
- 125 g soft light brown sugar
- 2 bananas peeled and mashed
- 50 g mixed peel
- 40 g chopped nuts
- 70 g dried cranberries
- 5-6 tbsp orange juice
- 2 eggs beaten
- 150 ml sunflower oil
- 85 g icing sugar sifted
- grated rind of one orange
Instructions
- Preheat oven to 180, grease 2lb loaf tin, base-line with parchment
- Sift flour and baking powder into a bow
- Stir in orange juice, eggs, and oil together in a separate bowl
- Mix together wet and dry ingredients until thoroughly blended
- Spoon mixture into prepared loaf, smooth surface
- Bake for one hour or until skewer comes out clean
- Mix icing sugar with water and brush over top of cake. Let set before slicing
- Top with grated orange rind
