Mariam’s Banana and Cranberry Loaf Cake

A delicious family-sized fruit loaf

Ingredients
  

  • 225 g self-raising flour
  • 1/2 tsp baking powder
  • 125 g soft light brown sugar
  • 2 bananas peeled and mashed
  • 50 g mixed peel
  • 40 g chopped nuts
  • 70 g dried cranberries
  • 5-6 tbsp orange juice
  • 2 eggs beaten
  • 150 ml sunflower oil
  • 85 g icing sugar sifted
  • grated rind of one orange

Instructions
 

  • Preheat oven to 180, grease 2lb loaf tin, base-line with parchment
  • Sift flour and baking powder into a bow
  • Stir in orange juice, eggs, and oil together in a separate bowl
  • Mix together wet and dry ingredients until thoroughly blended
  • Spoon mixture into prepared loaf, smooth surface
  • Bake for one hour or until skewer comes out clean
  • Mix icing sugar with water and brush over top of cake. Let set before slicing
  • Top with grated orange rind
