Mariam's Banana and Cranberry Loaf Cake
A delicious family-sized fruit loaf

- 225 g self-raising flour
- 1/2 tsp baking powder
- 125 g soft light brown sugar
- 2 bananas peeled and mashed
- 50 g mixed peel
- 40 g chopped nuts
- 70 g dried cranberries
- 5-6 tbsp orange juice
- 2 eggs beaten
- 150 ml sunflower oil
- 85 g icing sugar sifted
- grated rind of one orange
Preheat oven to 180, grease 2lb loaf tin, base-line with parchment
Sift flour and baking powder into a bow
Stir in orange juice, eggs, and oil together in a separate bowl
Mix together wet and dry ingredients until thoroughly blended
Spoon mixture into prepared loaf, smooth surface
Bake for one hour or until skewer comes out clean
Mix icing sugar with water and brush over top of cake. Let set before slicing
Top with grated orange rind
