Ceci’s Iced Gingerbread Biscuits
Delicately spiced gingerbread biscuits, perfect for Christmas or just for elevenses.
Ingredients
- 4 oz unsalted butter (at room temperature)
- 4 oz light brown soft sugar
- 10 oz plain flour
- 4 oz warm golden syrup
- 1 tsp bicarbonate of soda
- 3 tsp ground ginger
- 4 oz icing sugar
- 2 tbsp cold water
- A few drops of food colouring
Instructions
- In a large mixing bowl, cream together the butter and brown sugar with a wooden spoon
- Sieve the plain flour, bicarbonate of soda, and ginger into the bowl
- Heat the golden syrup over the hob (or in the microwave) until runny
- Add the golden syrup to the bowl and knead all the ingredients together
- Flatten the dough with a rolling pin, until half a centimetre thick
- Cut out shapes with a cookie cutter
- Place biscuits on to a baking tray and cook for ten minutes at 180 °C
- Take out of the oven and leave on a cooling rack
- Mix icing sugar with cold water, stirring frequently (add food colouring if required)
- Pipe icing onto biscuits with a piping bag
