Ceci's Iced Gingerbread Biscuits
Delicately spiced gingerbread biscuits, perfect for Christmas or just for elevenses.

- 4 oz unsalted butter (at room temperature)
- 4 oz light brown soft sugar
- 10 oz plain flour
- 4 oz warm golden syrup
- 1 tsp bicarbonate of soda
- 3 tsp ground ginger
- 4 oz icing sugar
- 2 tbsp cold water
- A few drops of food colouring
In a large mixing bowl, cream together the butter and brown sugar with a wooden spoon
Sieve the plain flour, bicarbonate of soda, and ginger into the bowl
Heat the golden syrup over the hob (or in the microwave) until runny
Add the golden syrup to the bowl and knead all the ingredients together
Flatten the dough with a rolling pin, until half a centimetre thick
Cut out shapes with a cookie cutter
Place biscuits on to a baking tray and cook for ten minutes at 180 °C
Take out of the oven and leave on a cooling rack
Mix icing sugar with cold water, stirring frequently (add food colouring if required)
Pipe icing onto biscuits with a piping bag
