Straight from the kitchen where ‘Light Bites’ co-creator Hannah Rashbash grew up, here’s her mum’s famous apple and rhubarb cake. Perfect for a sweet weekend breakfast, afternoon treat, or crowd-pleasing dessert.
Hannah’s Mum’s Apple Cake
A light and fluffy apple cake, created by Hannah's Mum
Ingredients
- 60 g self-raising flour
- 60 g caster sugar
- 60 g margarine softened
- 3 eggs
- 1 L cooking apple
- 20 g demerara sugar (optional)
- 1 lb rhubarb (optional)
Instructions
- Preheat oven to 180 degrees, butter a regular, round cake tin
- Mix flour, sugar, margarine, and eggs together in mixing bowl
- Cut apple into thin slices
- (optional) If using rhubarb, lay cut up rhubarb in prepared pan before batter, and sprinkle demerera sugar, then follow standard instructions below:
- Place half of cake batter into prepared tin
- Lay apple slices on top of batter, and top with remaining batter
- Bake for 30 minutes at 180℃ then test with knife or toothpick for doneness
