Straight from the kitchen where ‘Light Bites’ co-creator Hannah Rashbash grew up, here’s her mum’s famous apple and rhubarb cake. Perfect for a sweet weekend breakfast, afternoon treat, or crowd-pleasing dessert.

Hannah’s Mum’s Apple Cake

Ingredients
  

  • 60 g self-raising flour
  • 60 g caster sugar
  • 60 g margarine softened
  • 3 eggs
  • 1 L cooking apple
  • 20 g demerara sugar (optional)
  • 1 lb rhubarb (optional)

Instructions
 

  • Preheat oven to 180 degrees, butter a regular, round cake tin
  • Mix flour, sugar, margarine, and eggs together in mixing bowl
  • Cut apple into thin slices
  • (optional) If using rhubarb, lay cut up rhubarb in prepared pan before batter, and sprinkle demerera sugar, then follow standard instructions below:
  • Place half of cake batter into prepared tin
  • Lay apple slices on top of batter, and top with remaining batter
  • Bake for 30 minutes at 180℃ then test with knife or toothpick for doneness
